The concept for Coco Latté first emerged when some friends got together and decided that it was time that London's scene boasted a clubnight which was both stylish and exclusive, yet where the music was of a consistently high quality. It was intended from the outset that visitors to Coco Latté were to be treated as guests rather than bodies. Following an extensive and well-planned ad campaign, Coco Latté was launched amidst a blaze of publicity on Friday 19th June 1998 at the Hanover Grand, Hanover Street, Mayfair, London W1. The party was well received and packed with a fashion-conscious crowd from all corners of London's clubland.

In 1998 Coco Latté then started a weekly Saturday night residency at Chocolate Bar, comprising two floors at 59 Berkeley Square, Mayfair, London W1. From the beginning of October 1998 Coco Latté's promoter Nicholas made it his full-time occupation to develop the Coco Latté brand. This involved securing a number of top-flight guest DJs, including Smokin' Jo, Alan Thompson and Jeffrey Hinton, and Nicholas paid particular attention to the quality of the music. At the end of October 1998 Coco Latté moved to Friday nights at the same venue. An extensive ad campaign followed using the strap-line 'start your weekend in style' which quickly established Coco Latté as a household name on the London scene.

Whilst the club downstairs was the main focus of Coco Latté at Chocolate Bar, the ground floor bar had a totally different feel about it, and was transformed into Jonny's Lounge every Friday, hosted by the unique Jonny Hooley, recently referred to in a magazine article as a sex bomb trapped in sequins.

Coco Latté was the first clubnight to feature on Wired, Carlton Television's weekly late night London listings programme, which was shown on 20th September 1999. More recently in June 2001, Coco Latté featured on the BBC programme That Gay Show.
